Blackberry Lemon Clafoutis Recipe
Clafoutis is a delicious French dessert with a puffy fruit-filled batter. It was originally made with fresh cherries (complete with pits). Over the years, bakers have substituted other fruits for the cherries and those who make it with cherries have omitted the pits (to prevent broken teeth).

This dessert is quick and easy to assemble. It is best served warm, not hot, but is also delicious at room temperature. You can substitute other berries for the blackberries with excellent results. It’s also good with peaches.

8 Servings

3 tablespoons butter

1 cup whole milk
3 eggs
1/3 cup sugar, plus 2 tablespoons for sprinkling on top
1 teaspoon vanilla extract
zest of 1 lemon
1/2 teaspoon salt
1/2 cup flour

2 cups fresh blackberries

Powdered sugar, for dusting


  1. Preheat oven to 350°.
  2. Place the butter in a 2-3 quart shallow baking dish and place in the oven to melt the butter while preheating.
  3. Place the eggs, milk, 1/3 cup sugar, vanilla extract, lemon zest, salt, and flour in a blender container. Whizz on low speed (to prevent bubbles) until smooth, scraping down the sides once.
  4. When the butter has melted in the baking dish, pour in the batter. Arrange the blackberries evenly over the batter and sprinkle with the 2 tablespoons sugar.
  5. Bake 25-30 minutes or until puffed and brown.
  6. Remove from the oven and sprinkle with powdered sugar. Serve warm or at room temperature.
